Zesty Herb Kombucha Vinegar

This is the perfect zero waste solution to over brewed kombucha and leftover herbs. Zesty Herb Kombucha Vinegar can be added to just about everything from marinades to pan sauces. It can be mixed with broth to enhance the flavor of your soup or in a dish with oil for dipping. This tasty vinegar has the added bonus of being made with kombucha! This means it enhances your food with probiotics, digestive enzymes and helps your body utilize all the minerals and nutrients found in these herbs.

We prefer fresh herbs over dried, but feel free to substitute 1 tsp of dried herbs as needed. Also feel free to add any other herbs you might have on hand or in your garden. Other delicious additions include: fennel, sorrel, basil, rosemary, or chives.  

Zesty Herb Kombucha Vinegar Ingredients:

  • 1 tbs of oregano leaves
  • 1 tbs of thyme leaves
  • 1 tbs of tarragon leaves or 1 tbs of cilantro
  • 2 garlic cloves crushed with the side of a knife
  • 1 tsp salt & 1 tsp pepper
  • 3 cups over brewed kombucha
  • Quart size Mason Jar

Directions: Pour kombucha over all ingredients. Seal with a tight lid and store in a dark cabinet for a minimum of 6 weeks, up to 6 months. Once happy with the flavor, strain herbs and pour vinegar into a bottle or return to mason jar. The longer you let the vinegar infuse, the more flavor packed it will be!

Kombucha is a raw vinegar similar to apple cider vinegar. Use for dressings, marinades, soups, and sauces. Does not need to be refrigerated.
